Audrey, an inveterate gourmand, chocolate addict and passionate about baking, founded Délice & Décadence - Pâtisserie GI Bas.
Its goal? To indulge in a healthy and guilt-free way by revolutionizing the way we consume sweets.
It all started when Audrey discovered her insulin resistance in 2022, joining the millions of Canadians affected by diabetes or sugar-related issues (620 people a day are diagnosed with diabetes in Canada). Determined to change her eating habits while still enjoying herself, Audrey began creating low GI baking recipes.
While in 2024 she suffers from diabetes during her pregnancy, Audrey has developed delicious and healthy sweet products for her snacks and desserts to continue to indulge herself during this time. Realizing the lack of options on the market for those looking to reduce their sugar intake, Audrey decided to launch her own bakery specializing in low glycemic index (GI) pastries to help the thousands of people who suffer from no longer being able to eat pastries without feeling guilty.
With a dedicated team, Délice & Décadence is committed to offering products without refined white sugar and white flour, perfect for those looking to take care of their health without sacrificing taste pleasure.

Unique approach
Dive into the world of Délice & Décadence - IG Pastry where indulgence meets health. Our concept is based on Low GI, a different approach to sweetening our pastries.
What is Low GI?
The glycemic index (GI) measures the impact of foods on blood sugar levels. Foods with a "low GI" are digested more slowly, providing a gradual rise in blood sugar levels, which is beneficial for health.
Low GI diets are therefore ideal for diabetics, athletes or those who simply want to better manage their energy. This type of diet promotes satiety and helps avoid blood sugar spikes.
Délice & Décadence does not only play on the removal of white sugar in its recipes but it is a combination of all the ingredients that will allow this pastry to be low GI, in particular by adding the maximum amount of fiber in our recipes, thanks to the use of flours that take longer to digest in order to have less impact on blood sugar.
How do we sweeten our pastries?
By favouring natural and balanced ingredients, we ensure that each bite is a delight for your palate and beneficial for your well-being. We mainly use coconut blossom sugar (GI 53) and agave syrup (GI 15) which have a lower GI than traditional white sugar which stands at 70.
We also favor the fructose of fruits which will allow us to naturally sweeten certain recipes.
